This natural Honduras from BirdSong Coffee will delight all lovers of fruitier and more entertaining espresso. Notes of fermented cocoa beans add a more pronounced sweet aroma and light chocolate texture, while elements of maple syrup contribute a delicate, velvety caramel-honey sweetness. The whole flavor is complemented by a candy-like fruity touch reminiscent of strawberry ganache.
The coffee comes from the Marcala region in southern Honduras, near the border with El Salvador. It is the result of the work of producers from the COMSA (Café Orgánico Marcala) cooperative, which brings together over 1,200 farmers. COMSA supports the transition from conventional farming to more sustainable practices and is based on the principles of sustainability, improving community life, and education. The coffee takes its name from the majestic ceiba tree, known for its massive trunk and root buttresses resembling walls at the base of the tree. It grows up to 70 meters tall and was a sacred symbol of the connection between earth and sky for the Maya. The coffee is roasted for a fruitier espresso so that, in addition to milk chocolate, sweet notes of strawberry ganache and fermented fruit stand out.
Thedry ( natural) processing takes place directly on African beds, where the whole cherries are dried in the sun and turned regularly. The pulp thus imparts a distinctive sweetness, fruity notes, and pleasant juiciness to the beans.
