Guatemala El RABINALfrom BirdSong Coffee is an espresso that captivates you with its sweetness and richness from the very first sip . The flavor unfolds with notes reminiscent ofa Snickers bar —a combination of chocolate, caramel, and nutty sweetness that feels warm and rich. Added to this is a subtle citrus note that enlivens the coffee and gives it a pleasant freshness. The entire profile is rounded out by the sweetness of cane sugar, which softens the aftertaste and keeps everything beautifully balanced. The body is full and smooth, typical of espresso, and the coffee feels very approachable, yet interesting enough to enjoy every day.
The coffee comes from the Rabinal area in the Baja Verapaz region of Guatemala, where it is grown at an altitude of 1,600–1,700 meters above sea level. Behind this lot are producers involved in the Qawale project, which was established in 2006 with the aim of supporting small and medium-sized farmers. The project works in collaboration with the Vides58 organization from Huehuetenango, which shares its expertise in coffee cultivation and processing and provides farmers with technical support directly in the field. The emphasis is placed not only on coffee quality but also on sustainability—for example, increasing the proportion of native trees or protecting the soil. Thanks to the project, producers also gain social benefits and access to education and other resources.
Processing is done using the washed method, with most producers processing the coffee directly on their farms under careful supervision to ensure consistent quality. During both harvesting and subsequent processing, strict procedures are followed that farmers learned during Q-processing training. As a result, the final cup is clean, balanced, and well-defined. The combination of a traditional approach and expert guidance produces a coffee that combines the quality, consistency, and character typical of Guatemalan coffees.
