Gradually, the floral elegance of linden blossom is added, giving the coffee airiness and softness. In the aftertaste, everything comes together in the form of a smooth hazelnut cream. The flavor is clear, layered, and perfectly balanced.
The coffee comes from northern Peru, from the Las Pirias area in the Chirinos region, which is one of the most respected coffee-growing areas in the country. The producer is Eli Espinoza, a farmer who literally worked his way up to coffee. He came to the mountains as a teenager without land, worked as a picker on other people's farms, and gradually earned enough to buy his own land and house. Today, he cultivates four hectares of coffee trees at altitudes of 1,850-2,000 meters, where the mountain climate and slow ripening give the beans depth and elegance. In a region where local cooperatives support quality and fair remuneration for farmers, Eli is one of those who show how determination and patience can transform lives and the taste in a cup.
Processing is done using the washed method, which highlights the character of the place and the variety. After harvesting, the cherries go through a water bath, where unripe fruits are separated, then the pulp is removed and the beans are thoroughly washed. Drying is slow and careful—first one day in the shade, then about 35 days in a solar drying tent. The Geisha variety, originally from Ethiopia, is known for its floral aroma and delicate structure. At high altitudes, it has enough coolness and time to develop its complexity. The result is a coffee that offers elegance, clarity, and a unique experience.
