This coffee originates from the high mountain region of Mozonte, in the foothills of Cerro Mogotón, Nicaragua's highest mountain, where coffee trees grow at an altitude of 1,600 to 1,700 meters above sea level. The Los Nubarrones farm, founded in 2012 by Mariano Montealegre, focuses exclusively on the Java variety. The coffee trees grow here under the shade of pine, guava, and liquidambar trees, creating ideal conditions for coffee that is as unique as the landscape from which it comes.
This coffee is processed at the Cafetos de Segovia station in Ocotalo, run by the dynamic sisters Ana and Martha Albir. The coffee undergoes an innovative anaerobic fermentation process, i.e. fermentation without oxygen, and is then dried naturally. The result?
