Ethiopia Keramo from Kmen Coffee Roasters is a filter coffee created especially for Kofio’s birthday. The beans come from Ethiopia, specifically from the Sidama–Bensa region, from the Keramo farm. They are grown at a high altitude of around 2,300 meters above sea level, which significantly contributes to their sweetness and complexity in the cup. In terms of variety, this is a heirloom blend of local Ethiopian varieties, known for their aromatic and fruity character. The Daye Bensa organization is involved in production; it collaborates with farming communities in the highlands of Bombe and focuses on producing high-quality specialty coffee. Thanks to this connection between farmers and processing stations, coffee with a clear origin and consistent quality is produced.
Processing is done using the natural method, i.e., the dry method. The coffee cherries are processed at the Keramo washing station, where they are dried whole, with both the skin and pulp intact. This allows the distinctive sweetness and fruitiness characteristic of this coffee to gradually permeate the bean. Furthermore, the high altitude and slower ripening of the cherries contribute to a final cup that is complex, juicy, and full of exotic notes.
