El Salvador El Izote Geisha Natural—a special edition from The Naughty Dog roastery—is a sweet coffee with higher acidity and a distinctly dessert-like fruity profile. The flavor profile features blackberry jam, ripe melon, nougat, and pralines. The blackberries bring a juicy fruitiness, the melon a gentler sweetness, and the nougat and pralines shift the entire profile toward a rounder, dessert-like character. The result is a distinctive and layered cup in which fresh fruitiness blends pleasantly with a subtle chocolate sweetness.
The coffee comes from El Salvador, from the La Montañita region, where it is grown by Oscar Aguilar on the El Izote farm. Oscar continues a family tradition of coffee farming, and the farm began to develop as early as 1998 thanks to his father, Adelm Aguilar. In 2017, El Izote placed 7th in El Salvador’s Cup of Excellence. This lot consists of the Geisha variety, which grows at an elevation of 1,375 meters. The harvest took place in March 2026, making it a fresh harvest from the current season.
The coffee is processed using the dry method. After harvesting, the coffee cherries are sorted by hand and then dried whole—that is, with the skin and pulp intact—and the beans are separated from them only after drying is complete. Thanks to the beans’ prolonged contact with the pulp during the process, dry processing can enhance the coffee’s sweetness, fruitiness, and aroma. This method complements the coffee’s pronounced fruity and dessert-like profile perfectly.
