Finca Los Nogales is a family farm, or rather a company that combines tradition with innovation. You will find it in the village of El Diamante, not far from the town of Bruselas in the southern part of the Huila department. Members of the Hernández family date the farm's founding to around 1940. Its tradition and focus on growing the best coffee was then developed by Mr. Ricaurte Hernández. After his death, it was unclear for a while what would happen to the farm. However, Oscar Hernández, Mr. Ricaurte's son, took over the farm. The farm began to prosper more and more, and is now becoming a model for farmers throughout the area.
Oscar developed his own method of decaffeinating coffee using ethyl acetate (EA). The farmers place the coffee husks in barrels and let them rest until they release their juice. Oscar then adds his own specially bred yeast strain, which causes EA to form in the liquid. The juice obtained is mixed with peeled coffee beans, which are protected by parchment, and the EA gradually binds the caffeine. This process takes place in several cycles of varying duration—however, this know-how is unique to Oscar. A big advantage of decaffeination directly on the farm is that the coffee cherries are still protected by their natural membrane. Normally, decaffeination takes place in the finished beans, which can have a negative effect on the coffee. Enjoy these beans in a filter!
