The coffee comes from the Cyia processing plant in the Nyamasheke region of Rwanda. This region is known for producing high-quality coffees with a distinct and clean flavor profile. The resulting flavor is significantly influenced by the combination of the SL28 and SL34 varieties, which are characterized by their juiciness and pronounced acidity. The station workers’ meticulous approach, emphasis on cherry selection, and monitoring of every step of processing translate into consistent quality and clarity in every cup.
Processing is carried out using the traditional fully washed method, which highlights the coffee’s fresh character. First, the cherries are soaked in water tanks to remove lower-quality beans, then they are hulled and transferred to dry fermentation beds, where spontaneous fermentation takes place for approximately 15 hours. The coffee is then washed, soaked again in clean water for about 20 hours, and then moved to drying beds, where it dries for approximately 14 days. Thanks to this meticulous process, the coffee retains its purity, juiciness, and clearly defined flavor profile.
