The Colombia LOS NARANJOS from SEY Coffee is a beautiful example of just how bold yet elegant the Chiroso variety can be. From the very first sip, the cup feelsjuicy and light. The flavor features notes of yellow tropical fruit, reminiscent of ripe mango or pineapple, complemented by a sweetness reminiscent of strawberry candies. A subtle hoppy note emerges in the finish, giving the coffee a slightly herbal and unexpectedly fresh character. The acidity is more pronounced but beautifully rounded, the body is on the lighter side, and the individual flavors gradually unfold in the cup. When brewed with a filter, the lightness, fruitiness, and long, sweet aftertaste really shine through.
Behind this coffee is farmer José Peña from the Urrao area in the Antioquia region of Colombia. In recent years, Urrao has become one of the most interesting places for growing the Chiroso variety, which is significantly changing perceptions of the flavor potential of Colombian coffees. Chiroso has been genetically identified as a variety originating from wild Ethiopian coffee trees. As a result, it often offers a distinct floral aroma, a fruity character, and a delicate elegance that is typical of this variety. The coffee comes from an altitude of around 2,000 meters, where the slower ripening of the cherries helps develop greater sweetness and depth of flavor.
The processing is washed, but with an emphasis on precise fermentation. The cherries were hand-picked at optimal ripeness, then sorted in a water bath and left whole overnight. After hulling, a 36-hour dry fermentation followed, followed by washing. Drying took place on raised beds until the ideal moisture content was reached. The result is an elegant yet very distinctive cup that clearly demonstrates why the Chiroso variety is currently attracting so much attention in the world of specialty coffee.
