Ripe blackberries, hibiscus, and lime zest give this Colombian coffee from SEY Coffee a juicy, fresh, and beautifully clean character. In the cup, sweet blackberry notes emerge first, gradually complemented by delicate floral tones of hibiscus and an aromatic citrus note reminiscent of lime zest. The result is an elegant cup with a pronounced yet pleasantly sweet acidity. If you enjoy Colombian Pink Bourbons with a clean fruit profile and light floral notes, Nicolas Medina El Girasol will be just right for you.
The coffee comes from the El Girasol farm in the La Florida area near La Plata in Colombia’s Huila region. Behind this lot is Nicolas Medina, who farms here at an elevation of 2,020 meters above sea level. SEY has a long history with the Medina family, having previously purchased distinctive Pink Bourbons from Nicolas’s son, Abelardo. Nicolas now continues the work on the farm, building on his family’s experience with growing this variety. The high altitude slows the ripening of the cherries and enhances their aromatic complexity, which translates into a distinct fruitiness and clarity in the cup.
The variety is Pink Bourbon, which is prized for its pronounced sweetness, floral aromas, and lively fruity acidity. The processing method is washed and involves several carefully controlled steps. The cherries are harvested at optimal ripeness and then sorted using the floating method to remove lighter and lower-quality fruits. The whole cherries are then allowed to rest for 24 hours, after which they are hulled and undergo dry fermentation for another 36 hours. Finally, the coffee is washed and dried on raised beds until the moisture content drops to approximately 10%.
