Tuke Yute from SEY Coffee will especially delight lovers of sweet and distinctly aromatic filter coffees. The flavor is reminiscent of strawberry jam, which lends the cup a fuller, fruity sweetness, while lychee adds a juicier, exotic note. A delicate rose aroma emerges in the finish, lightening the entire profile and lending it a more elegant character. The coffee feels clean and fresh, with a long-lasting fruity sweetness accompanied by floral notes.
The coffee comes from Keramo in the Bensa region of Ethiopia, where it is grown by producer Tuke Yute. His own farm covers approximately 10 hectares, but he also processes cherries from about 30 smallholder farmers in the surrounding area. SEY has been following his work for several years, and this lot represents their first purchase directly from Tuke. The coffee trees grow here at a high elevation of around 2,200 meters above sea level, where lower temperatures slow the ripening of the cherries and create ideal conditions for the development of sweetness and complex aromas. The coffee comes from the January 2026 harvest.
The variety is 74158, an Ethiopian heirloom variety associated with a clean and distinctly aromatic flavor profile. The coffee was processed using the honey method. Ripe cherries are harvested by hand and then undergo floating, a process that separates the lighter and lower-quality fruits. The cherries are then pulped, leaving a small amount of sweet pulp, or mucilage, on the beans. The coffee prepared in this way is dried for approximately 3 days on shaded raised beds until it reaches about 10% moisture content. The honey process here helps enhance the sweetness and juiciness without overshadowing the coffee’s clean fruity and floral character.
