Fresh, juicy, and distinctly fruity—that’s exactly what this Colombian Pink Bourbon from SEY Coffee is like. Its flavor is reminiscent of sweet lemonade, complemented by light floral notes of hibiscus and the ripe fruitiness of mulberries. The overall impression is clean and lively, with a pleasantly pronounced acidity and a sweet finish.
The coffee comes from the La Granja farm near the town of Santa María in Colombia’s Huila region, where it is grown by Guiliar Pérez Cuéllar. Guiliar spent much of his life working on coffee farms before he was able to save up enough to buy his own land. He started with a small plot he acquired from his father-in-law and later added a neighboring parcel. It was there that he planted approximately 1, 000 Pink Bourbon saplings. This lot comes from his second harvest for SEY in 2026, and the coffee trees grow at an elevation of around 1 ,850 meters above sea level.
The variety is Pink Bourbon, which is sought after for its pronounced sweetness, fruitiness, and floral aromas. The coffee was processed using the washed method. Ripe cherries are harvested by hand and first undergo floating, during which lighter and lower-quality fruits are removed. The whole cherries are then left to rest for 24 hours, after which they are hulled, and the beans undergo dry fermentation for another 48 hours. After fermentation, the coffee is thoroughly washed and dried on raised beds until it reaches approximately 10.5% moisture content. The result is a clean profile that allows the juicy fruitiness of this variety to shine through.
