The coffee comes from the Quebraditas farm in the Huila region of Colombia, where it is grown by Edinson Argote. Enzymatic fermentation is used to create the unique profile of this coffee. Ripe cherries are first sorted and oxidized for 24 hours in plastic barrels to prepare them for fermentation.
