This natural filter tastes like a juicy tropical mix. You'll find sweet pineapple juice, yellow melon, and refreshing coconut water in it. The aftertaste also features a subtle hint of cocoa, which completes the whole experience. A filter that almost drinks itself!
This naturally processed coffee comes from the Gaitania region in southern Tolima, where small farmers grow Colombia, Castillo, and Caturra varieties. Most of them continue a family tradition of coffee growing, often passed down through generations. Gaitania lies at the foot of Colombia's third highest mountain, Nevado del Huila, and coffee is not only a key part of the economy here, but also part of the cultural heritage. After a difficult period in the 1990s, when farmers switched to growing poppies due to low purchase prices, most returned to coffee, their true passion. Thanks to its altitude, microclimate, and rich volcanic soil, Gaitania coffee has a complex flavor profile with excellent sweetness and structure. By supporting these producers, we are helping to preserve their work, landscape, and tradition, which makes Colombian coffee so exceptional.
The coffee is processed using the natural method, which is often used in areas with water shortages, especially in Africa and dry parts of Latin America, such as Brazil, and is characterized by drying whole cherries without prior washing. In the case of Colombia Las Garzas, however, the cherries undergo a controlled 38-hour fermentation process before drying, which enhances the fruit profile and gives the coffee greater depth. They are then dried for eight days on African beds in the shade, where they are regularly turned to ensure even drying, prevent unwanted fermentation, and preserve the complexity of the flavor. Once drying is complete, the skin is mechanically removed in a dry mill, and the result of a properly executed process is a lively, sweet, and exceptionally full-bodied cup with fruity notes and a creamy body, making this coffee not only a taste experience but also a story of people who believe in their work, the soil, and are able to change the world one cup at a time.
