Juicy, exotic, and distinctly aromatic— the Colombia Nestor Lasso Sidra from Foundation Coffee Roasters offers a modern profile that stands out for its clarity and complexity. The cup reveals notes of green apple, yellow plum, kiwi, and pomegranate, which together create a fresh and fruit-forward character. The acidity is lively and reminiscent of ripe tropical fruit, while the sweetness comes across as delicate and elegant. The result is a cup with a light yet distinctive aroma that beautifully showcases the potential of Colombian micro-lots intended for filter brewing.
The coffee comes from the El Diviso farm in the Huila region of Colombia, run by producer Nestor Lasso. The farm is known for its experimental approach to coffee cultivation and processing and has long been among the most interesting producers of modern Colombian specialty coffee. High-altitude conditions at an elevation of approximately 1,750–1,850 meters above sea level, combined with volcanic soils and a stable microclimate, allow for the slow ripening of coffee cherries. This results in dense beans with a distinctive aroma and complex structure, which manifests in the cup as fruity clarity and clearly defined acidity.
The lot is processed using the natural method, in which whole coffee cherries are dried together with their skin and pulp. This process promotes the development of sweetness, fruity notes, and a fuller body. The Sidra variety, a hybrid of Bourbon and Typica, is known for its complex aroma and wine-like acidity, which stands out particularly in filtered brewing. Thanks to precise processing and careful cherry selection, the result is a cup with a distinct fruity profile, elegant sweetness, and a long, clean aftertaste.
