Java Cloud by Concept Coffee Roasters is a Colombian coffee that evokes the scent of a delicate perfume in the cup. The flavor profile features intense jasmine, lemongrass, a floral bouquet, melon, and juicy citrus notes. It’s a clean and elegant profile built on floral aromas with a fresh citrus note, gently rounded out by hints of sweet melon in the finish.

The coffee comes from Colombia’s Pitalito region, specifically the El Diviso farm. Behind the production is Nestor Lasso, who—together with his brother Adrian and Jhoan Vergara from Finca Las Flores—transformed what was originally a traditional family farm into a place focused on experimental processing and rare cultivars. Today, El Diviso is one of the leading names in modern Colombian specialty coffee. Work on the farm focuses on precise quality control, the selection of ripe cherries, and fermentation processes designed to highlight the aroma and clarity of the final cup. The coffee grows at an elevation of 1,750 to 1, 850 meters above sea level, which promotes slower ripening and greater flavor complexity.

The variety is Java, with origins in Ethiopian genetics, which often expresses tea-like, floral, and citrus notes in the cup. The processing method is natural with carbonic maceration. After being hand-selected, the whole coffee cherries are placed in sealed stainless-steel tanks filled with carbon dioxide, where they ferment in a low-oxygen environment. This process, known from winemaking, helps develop fruity esters, floral aromas, and a cleaner flavor profile. After fermentation, the cherries are slowly sun-dried on raised beds and then allowed to rest before hulling.
