Colombia Wilton Benitez Geisha from Gust Coffee Roasters is a Colombian all-purpose coffee with a distinctly fruity, floral, and highly complex profile. In the cup, notes of passion fruit, orange blossom, and violet come together, complemented by the sweetness of white grapes and peach candies in the aftertaste. The acidity is juicy and lively, yet the overall profile remains delicate and elegant. This coffee works well in both filter and espresso preparations, offering a distinctive aroma, sweetness, and a long, fruity finish.
The coffee comes from Colombia’s Cauca region. Specifically, it originates from the Piendamó area on the La Macarena farm, which is part of the Granja Paraíso 92 project. Behind the production is Wilton Benitez, a chemical engineer and experienced grower who combines his work with coffee, a scientific approach, and very thorough quality control of every lot grown. The Geisha variety grows at an elevation of 1,950 meters above sea level. Wilton’s project currently includes the La Macarena, Las Brisas, and Granja Paraíso 92 farms, totaling over 100 hectares of land, 20 of which are protected forest. The facilities include a microbiology laboratory, a quality control laboratory, and an on-site processing plant.
Processing is carried out using a washed anaerobic method with 96-hour fermentation and thermal shock technology. Ripe cherries are first carefully sorted and sterilized with ozonated water and ultraviolet light. They are then pitted and fermented for 96 hours in bioreactors using yeast and in the absence of oxygen. This is followed by thermal shock, during which the cherries are first exposed to a higher temperature and then to cold. Finally, they are gently washed and dried under controlled conditions until they reach an internal moisture content of 10.5%.
