INDIAN SUMMER from the Slovak roastery Kaffa Roastery is an experimental honey coffee with a distinctive and layered flavor profile. In the cup, you’ll find blackberry and raspberry, complemented by fresh kumquat (a small citrus fruit similar to a mandarin), caramel sweetness, and a juicy aftertaste reminiscent of apple juice. This coffee comes from the San Agustín area, located at the border of three Colombian regions—Huila, Tolima, and Caldas—at an elevation of 1,750 meters above sea level. San Agustín is world-renowned not only as an exceptional coffee terroir but also as a UNESCO World Heritage Site thanks to its rich archaeological heritage. Behind this coffee is the community of smallholder farmers known as the San Agustín Coffee Producers, who collaborate with the El Vergel Estate processing facility on experimental fermentation techniques. Thanks to this collaboration, the farmers are able to offer a coffee with a distinctive and sophisticated profile—one they could not achieve on their own using conventional processing methods—and receive a fairer price for it.
The lot is a blend of the Caturra and Colombia varieties. Caturra is a compact mutation of Bourbon, prized for its quality and ideally suited to Colombia’s sloping farms. Colombia is a cultivated cultivar derived from Catuaí and the hardy Timor, combining resistance to coffee rust with distinctive flavor qualities. After harvesting, the cherries undergo a controlled honey fermentation enriched with fruit and lactic acid bacteria cultures, known as lacto-fermentation. Some of the sweet pulp remains on the bean, as in the classic honey process, while the added Lactobacillus cultures interact with the natural sugars, shifting the profile toward more pronounced fruitiness and sweetness. After fermentation, the coffee undergoes slow drying, which gives it a stable and balanced structure.
