Nowhere Coffee Roasters is a Milan-based roastery, and their Ombligón from the Finca Anaya farm in Colombia is a coffee that demands attention from the very first sip. In the cup, you’ll find the velvety smooth texture of a strawberry milkshake, the tropical sweetness of mango and nectarines, and a playful hint of bubblegum, all supported by a fresh acidity that brightens the flavor without overpowering it. Ombligón comes from Finca Anaya, a 4.5-hectare family farm nestled in the Aceveda hills of the Huila region in southern Colombia. For decades, Sergio Darío Aranda has been carefully refining both his agricultural approach and fermentation methods here, resulting in a coffee with a distinct identity. The Ombligón variety itself is a natural mutation of the coffee bean, cultivated and propagated locally precisely for its exceptional flavor profile. The Huila region is one of Colombia’s most significant coffee-growing areas, where an altitude of around 1,600 meters, rich biodiversity, and a favorable climate combine to create ideal conditions for coffee of the highest quality.

The coffee undergoes a washed processing method, enhanced by controlled fermentation. After harvesting exclusively ripe cherries, the fruits are first fermented whole for 24 hours, then pulped, and the beans are immersed in water heated to 38 °C along with selected yeasts and a fruit pre-ferment for another approximately 69 hours. Once fermentation is complete, the beans are rinsed and slowly sun-dried for 8 to 12 days.
