Colombia CHERRY BLOSSOM from the Paris-based roastery People Possession might suddenly make you want to brew another cup. You definitely won’t overlook this limited-edition coffee from the Industrial Supply Series RED. The aroma alone hints at a distinctive experience, blending sweet cherries, strawberry candies, and delicate vanilla. On the palate, the coffee is incredibly juicy, sweet, and full-bodied, yet it retains its clarity and pleasant texture. Every sip evokes perfectly ripe red fruit with a long, creamy aftertaste that will delight you from the first sip to the very last.

The coffee comes from the Huila region of Colombia, one of the most renowned areas for growing specialty coffee. The local mountainous conditions, high altitude, and fertile volcanic soils create the ideal environment for the slow ripening of coffee cherries and the development of a rich flavor profile. The Castillo and Colombia varieties that make up this lot are known for their sweetness, balance, and ability to respond very well to modern processing methods. It is precisely thanks to the careful selection of ripe cherries and an emphasis on quality that this coffee retains its purity despite its exceptionally intense character.

This lot was processed using the natural co-fermented method with red cherries. After harvest, the selected coffee cherries are fermented together with red cherries, whose natural sugars and aromatic compounds influence the development of flavor precursors within the beans during a controlled process. The coffee is then dried as a whole, including the pulp, which promotes the development of pronounced sweetness, a fuller body, and intense fruity aromas. After drying, the dried skins are removed and the beans are carefully sorted. The result is an exceptionally lively cup with an explosion of cherry notes, vanilla sweetness, and a long, juicy finish that perfectly captures the bold style of the People Possession roastery.
