coffee comes from Colombia, specifically from the Palestina area in the Huila region, which is among the most renowned growing regions in the entire country. Coffee trees grow here at an elevation of around 1,680 meters, where the cooler climate and fertile volcanic soil slow the ripening of coffee cherries and promote the development of more pronounced sweetness and more complex flavors. This lot consists of the rare Ombligon variety, known for its distinctive fruity character and high aromatic potential. The roasting was handled by the Milan-based roastery Nowhere Future Coffee Roasters, which focuses exclusively on single-origin coffees and roasts them in a way that best highlights the character of the specific farm, variety, and origin.
This lot underwent inoculated yeast fermentation—that is, controlled fermentation with the addition of selected yeasts.
