Guatemala EL PARAISO SL 28 is a limited edition from the Czech roastery Doubleshot, showcasing the best of the current harvest from young Guatemalan producer Urisara Ferneldy. This coffee features the Kenyan SL 28 variety, which has earned worldwide recognition for its lively acidity and exceptional complexity. In the cup, you’ll find intense notes of currant jam and juicy citrus, complemented by a creamy body and a long, sweetly fruity aftertaste. The pronounced acidity feels fresh and energetic, yet it’s perfectly balanced by sweetness, resulting in an elegant and harmonious flavor profile.
The coffee comes from the El Paraiso farm in the Huehuetenango region of Guatemala. The farm was founded by Urisar’s grandfather back in 1965, but Urisar himself gradually took over its management after studying agronomy and began to systematically develop it. Today, on sixteen hectares at an elevation of 1,800 to 2,050 meters above sea level, he grows not only traditional varieties but also Geisha, Pacamara, and SL 28, which thrives exceptionally well in the highest parts of the farm. Although the farm’s facilities remain relatively modest, his commitment to quality is admirable. In addition to his own production, he helps dozens of neighboring farmers with the processing and sale of their coffee, thereby supporting the development of the entire local community.
The coffee was processed using the classic washed method with extended fermentation. After being hand-harvested, the cherries were carefully sorted in a water bath, then pulped and fermented for approximately 36 to 48 hours. Thanks to the longer fermentation, greater depth of flavor develops while maintaining the clarity of the final cup. After washing, the beans were dried for 10 to 14 days on African drying beds, which allow for even airflow and gradual drying. The result is an exceptionally clean, elegant, and lively coffee that fully showcases the fruity character of the SL 28 variety and the unique terroir of Huehuetenango, Guatemala.
