The legendary Yirgacheffe region in southern Ethiopia is considered the cradle of coffees with a delicate and complex flavor. Coffee is grown here without the use of any chemicals and with the utmost respect for the local ecosystem. At an altitude of 1,995–2,020 meters above sea level and in soil enriched with volcanic minerals, coffee trees have ideal growing conditions. Thanks to the cooler climate and greater shade, the cherries ripen a little slower, which brings out their flavor profile.
NEGELE GORBITU coffee consists of three original Ethiopian varieties: Kurume, Dega, and Wolisho. Carefully picked and sorted, the cherries undergoanaerobic dry fermentation, during which they are fermented for several days in closed stainless steel containers without access to oxygen. Slow fermentation contributes to the development of all flavor layers and gives the coffee a full body and interesting complexity. The cherries are then dried and turned regularly to prevent mold growth. After aging, they are taken care of by the Czech roastery The Naughty Dog, where Jenny and Maja carefully monitor the entire roasting process to ensure that the coffee you receive is absolutely perfect.
