The first sip of Unity Coffee Roasters’ Ethiopia Messier is delicate, yet immediately captivates with its lightness and juiciness. The flavor features notes of ripe peach, complemented by a fresh citrus spark and a smooth, honeyed sweetness. The entire cup feels very airy, almost like a light fruit tea that is naturally sweet and pleasantly refreshing. Subtle floral nuances also emerge in the background, lending the flavor elegance and a calm, smooth character. This is not a coffee that is loud or overly assertive. Its strength lies more in its purity and fluidity. Everything flows naturally, without sharp transitions. The flavor is smooth, balanced, and very easy to read, so you can enjoy it without thinking, yet it never ceases to delight even after several sips.

The coffee comes from the Bensa area in Ethiopia’s Sidama region, where it is grown at high altitudes of around 2,000 meters. This part of Ethiopia is known for its cooler climate, regular rainfall, and fertile soil, which create ideal conditions for the slow ripening of coffee cherries. Thanks to this, the beans have more time to develop their complexity and retain their natural freshness. Cultivation here relies mainly on small-scale farmers who tend to small plots of land and often work using traditional methods. The coffee grows in the shade of other plants, which helps stabilize conditions and protects it from extremes. It is precisely the combination of altitude, environment, and the farmers’ expertise that gives the coffee its distinctive character—delicate, clean, and very balanced.

The washed processing method plays a key role here and significantly shapes the final character. After harvest, the cherries are first mechanically de-pulped and then transferred to fermentation tanks, where they rest in water for several hours. During this phase, the remnants of the sweet layer surrounding the bean gradually break down, which helps highlight its natural structure. This is followed by washing, which removes all pulp residues and allows only the core of the flavor to shine through. The beans are then dried on raised African beds, where they have plenty of air and space. Drying takes place slowly and under careful supervision. These steps give the coffee its characteristic transparency. The flavor is clean, with distinct notes clearly separated, and nothing feels distracting or heavy. It is a style that relies not on intensity, but on precision and detail.
