Ethiopia DANSE MORMORA is a specialty coffee from the Czech roastery Tribes of Mokha that will delight any lover of fruity Ethiopian pour-over coffees. The flavor first unfolds with the sweetness of ripe strawberries and honey, which is gradually complemented by subtle notes of orange blossoms. The overall flavor profile is clean, balanced, and naturally sweet, with the individual notes flowing seamlessly into one another. The velvety body gives the cup a pleasant fullness, and the long finish allows the floral and fruity nuances to shine through.
The coffee comes from the Guji region in southern Ethiopia, which was still considered part of the Sidama region at the beginning of this century but is now recognized as a distinct and highly prized growing region. Local smallholder farmers grow traditional Heirloom varieties in small gardens scattered among the forests. The character of the local coffee is significantly influenced by the red mountain soil and the slow ripening of the cherries at higher altitudes, which give them their typical sweetness, fruitiness, and delicate floral aroma. Farmers transport the harvested cherries to communal processing stations, where they are carefully sorted and processed as a single lot with an emphasis on the highest possible quality.
This lot was processed using the Special Preparation Natural method, which is among the most meticulous methods for preparing natural coffees in Ethiopia. For processing, almost exclusively perfectly ripe cherries are selected from a limited number of farmers, often from a single day’s harvest. After thorough sorting and rinsing, the whole cherries are dried on elevated African drying beds, where they are regularly turned to ensure even drying. Thanks to this carefully controlled drying process, the result is a coffee with a full body, intense fruitiness, and a pleasant sweetness, complemented by a clean and balanced aftertaste.
