The coffee comes from the Cacua region of Colombia, where it is grown for the Manos Juntas processing station by dozens of smallholder farmers at altitudes between 1,400 and 2,000 meters. This unique project was created so that producers could focus on what matters most: the careful cultivation and selective harvesting of perfectly ripe cherries. All subsequent processing takes place under the supervision of an experienced team that monitors fermentation, drying, and storage. The combination of volcanic soils, higher altitudes, and a stable climate allows the cherries to ripen slowly, resulting in denser beans with a more pronounced flavor profile and excellent clarity in the cup.
This coffee was processed using the dry method. After hand-picking and sorting, the whole cherries undergo controlled fermentation and are then slowly dried on raised beds or in solar dryers for approximately 30–45 days. Slow drying allows for the even development of sweetness and fruity notes. Once the target moisture content is reached, the beans are stabilized and then undergo dry-milling, during which the dried pulp and parchment layer are removed, and the coffee is finally sorted by quality. The result is a sweet, full-bodied, and aromatically distinctive cup with a long finish.
