CGLE Las Margaritas Natural Geisha from Tanat Coffee is a Colombian coffee intended for pour-over brewing. It has an exotic and distinctly aromatic profile. The coffee comes from Colombia, from the Las Margaritas farm, which is part of Cafe Granja La Esperanza. Rigoberto Herrera is behind the production, and this lot consists of the Geisha variety. The farm is located in the Valle del Cauca region at an elevation of 1,750 to 1,800 meters. Las Margaritas is one of Granja La Esperanza’s standout farms, and what makes this micro-lot special is the combination of its specific origin, prestigious variety, and meticulous handling of small quantities of coffee. A score of 89 points indicates that this coffee is focused on a distinctive sensory experience and precise processing.
Processing is carried out using the natural method with a 72-hour fermentation. With natural coffee, whole cherries are left to process with their skin and pulp after harvest, which is why it is necessary to carefully monitor the fermentation process and subsequent drying. The longer fermentation phase gives this lot a clear structure and requires control over temperature, time, and the quality of the cherries. After fermentation, the coffee is dried so that it gradually stabilizes and reaches the desired moisture content. The result is a Geisha in which not only the variety itself but also the precisely controlled natural process plays a major role.
