The coffee comes from the Nariño region of Colombia, the country’s southernmost coffee-growing area on the border with Ecuador. The region’s steep mountain slopes, deep valleys, and elevation ranging from 1,500 to 2,200 meters create a unique microclimate that allows the coffee cherries to ripen slowly, developing pronounced sweetness and lively acidity. This lot was produced as part of the Gran Galope program, which brings together the harvests of ten to thirty small-scale farmers from the area around the town of Consacá. Thanks to this model, producers gain better market access and can focus on careful cultivation and selective harvesting, while the resulting coffee retains the high quality and character typical of the region.
The Castillo variety beans were processed using the traditional washed method. After hand-picking, the skin and pulp are removed from the cherries, followed by fermentation, which loosens any remaining pulp clinging to the beans. The coffee is then thoroughly washed with clean water and slowly dried until it reaches the ideal moisture content. The washed processing method allows thecoffee’s true character to shine through, highlighting its purity, lively acidity, and distinct flavor profile. The result is a balanced cup with a full-bodied flavor, subtle citrus freshness, a sweet aftertaste, and an elegant character typical of top-quality coffees from the Nariño region.
