The Prague-based roastery Tribes of Mokha combines playful fruitiness with a moderately rounded body and pronounced sweetness. The flavor profile features ripe peach paired with fresh mandarin. This profile is rounded out by a distinct honey-like sweetness. Las Palmas also stands out for its blend of the Tabi and Pink Bourbon varieties and its natural processing with controlled fermentation, which brings its fruity character even more to the forefront. Las Palmas comes from the Huila region of Colombia, specifically the Palestina area, where Efren Echeverri Ortega and his family farm at an elevation of approximately 1,650 to 1,800 meters above sea level. The Las Palmas farm covers approximately 7.2 hectares and has been home to the Echeverri family for more than 20 years. In recent years, they have focused primarily on specialty coffee, experimenting with fermentation, and managing the entire process—from cultivation and hand-picking to processing and drying— directly on the farm.
Las Palmas underwent dry (natural) processing supplemented by controlled fermentation. In the natural method, coffee cherries are processed whole—that is, with the skin and pulp intact—and only after drying are the dried parts of the fruit removed. After harvesting, the ripe cherries are first sorted to remove impurities and then undergo fermentation. It is precisely the combination of natural processing and controlled fermentation that helps highlight the fruity notes of the Tabi and Pink Bourbon varieties while preserving the sweet and balanced character of the final cup.
