This Colombian gem from experienced farmer Daniel Ortega is an absolute must-have for lovers of refined flavors. In the cup, you’ll find a perfectly balanced body with undertones of lemon tea. These fantastic beans of the very popular Pink Bourbon variety were grown on the fertile Finca Buenos Aires farm at an elevationofexactly1,850 meters above sea level.We’re located in the picturesque Colombian region of La Muralla, near the town of San Agustín. Behind this gem is 72-year-old producer Daniel Ortega, who has dedicated his entire life to coffee cultivation and is considered a true pioneer in his field. He previously focused on producing the Caturra variety, but due to a devastating coffee rust outbreak, he had to completely replant his entire farm. He chose the Pink Bourbon variety, which is highly prized for its clean, sweet, and aromatic profiles. This farmer’s expertise is clearly reflected in every bean.

The balance of this cup is the result of a precise and time-consuming washed processing method. The ripest cherries are carefully harvested on the farm every 15 days. This is followed by an initial fermentation of the whole cherries for 24 hours. The very next day, the fruits are pulped and left to undergo dry fermentation —without pulp—for another 20 hours. After this crucial step, all remaining beans in their parchment are thoroughly rinsed with clean water. Finally, the coffee is slowly dried on special solar beds for approximately 15 days until it reaches the ideal moisture content. This rigorous process ensures that the resulting beverage is perfectly clear.
