Behind this exceptional coffee is producer Wilder Lasso, who originally worked as a veterinarian specializing in livestock. In 2016, however, he decided to return to the family farm, Bella Alejandria, in the San Adolfo area of the Huila region, as the family was facing a difficult period and a decline in coffee prices. The farm is located at an altitude of around 2,100 meters, where cool nights and high elevation slow the ripening of coffee cherries and promote the development of complex flavors. Wilder, together with his brother, began systematically working the soil, analyzing its composition, and specifically adjusting the trees’ nutrition to achieve consistent quality and greater flavor potential. This approach, which he calls precision agriculture, elevated the quality of their coffee from an average of 80 to 83 points to the top tier of specialty coffee.
The exceptional clarity and floral character of this Geisha are achieved through washed processing combined with extended fermentation. The cherries are harvested at full ripeness and first undergo a thorough washing process to remove impurities and light or unripe fruits. They are then fermented in the pulp for 36 hours, which helps develop the aroma and delicate sweetness in the cup. After fermentation, the coffee is washed again and dried for approximately 12 days on raised African beds in covered drying houses to ensure even dehydration. This precise process allows the delicate notes of lavender, bergamot, and jasmine to shine through, while the body remains light, silky, and perfectly clean. The result is a coffee that feels almost ethereal, yet possesses a clear structure and the unmistakable character of Geisha from the highlands of Colombia.
