The coffee comes from Colombia, from the Pitalito area in the Huila region , and is produced by Néstor Lasso together with Adrián Lasso and Jhoan Vergara at the El Diviso farm . These producers are among the most prominent names in contemporary Colombian specialty coffee, and their work is characterized by a meticulous approach to quality and fermentation. Processing is carried out using the advanced natural fermentation method, a multi-stage natural process designed by the Cata Export and El Diviso teams to extract maximum sweetness and aromatic intensity from the cherries. The process involves several consecutive phases of oxidation, anaerobic fermentation, submerged fermentation, and thermal shock, and one of the most interesting steps is the rehydration of the beans before further processing.
