This Colombian coffee from Boo! Coffee Roasters is aimed squarely at lovers of pronounced sweetness, intense fruitiness, and a bold flavor profile. In the cup, it comes across as bold, juicy, and almost candy-like, with notes of orange candy, pomegranate, red grapes, and strawberries. This is a coffee that doesn’t play it safe; instead, it builds on the pure joy of a bold, sweet, and fruity pour-over. Boo includes it in its Extra line as a coffee for those who want more sweetness, more fruit, and more character.

The coffee comes from Colombia, from the Pitalito area in the Huila region , and is produced by Néstor Lasso together with Adrián Lasso and Jhoan Vergara at the El Diviso farm . These producers are among the most prominent names in contemporary Colombian specialty coffee, and their work is characterized by a meticulous approach to quality and fermentation. For this Sugar Rush edition , they selected the Yellow Papayo variety , which is described as rare and highly expressive. The origin and the producers’ signature style alone suggest that this is a coffee with distinctive aromas and a very striking flavor profile.

Processing is carried out using the advanced natural fermentation method, a multi-stage natural process designed by the Cata Export and El Diviso teams to extract maximum sweetness and aromatic intensity from the cherries. The process involves several consecutive phases of oxidation, anaerobic fermentation, submerged fermentation, and thermal shock, and one of the most interesting steps is the rehydration of the beans before further processing. The coffee is then mechanically dried with controlled breaks and resting periods in sealed bags. The result is an exceptionally sweet, fruity, and intense cup that truly lives up to its name.
