The coffee comes from Honduras, specifically the Santa Barbara region , from the El Mirador farm , where it is produced by Elder Chavez. He has built a strong reputation in this region and has gradually transitioned to growing specialty varieties, completely planting the El Mirador farm with Geisha from seeds provided by the Hartmann family of Panama. The coffee trees here grow at an altitude of 1,800 meters above sea level, which, together with the conditions in Santa Barbara, fosters a clean, floral, and very elegant flavor profile. It is precisely the combination of terroir, variety, and the producer’s meticulous work that gives this coffee its refined character.
Processing is done using the washed method, which in this case is carried out with a strong emphasis on cleanliness and precision. After the selective hand-picking of ripe cherries, dry fermentation takes place in tiled tanks for 28 to 36 hours. The coffee is then dried slowly, with ample airflow and protection from direct sunlight, to preserve its purity and floral character. The result is a cup characterized by a delicate texture, fresh acidity, and a long, clean finish.
