Behind this exceptional lot is Jonathan Gasca from the Zarza farm in Colombia’s Huila region. Jonathan is among the producers who push the boundaries of processing and aren’t afraid to experiment with flavor and aroma. The Bourbon Aji variety he works with is very aromatic on its own, and combined with his approach, it gives rise to distinctive and unmistakable profiles. Thanks to a collaboration with the exporter Cata, this micro-lot made its way to Europe as a special edition for Kofio’s anniversary.
Processing is carried out using the Advanced Naturalmethod, which emphasizes the maximum development of sweetness and fruitiness. After selective hand-picking, the cherries are fermented whole under controlled conditions, allowing for the development of complex aromas and distinct flavor layers. Subsequent slow drying helps stabilize the profile and blend the individual flavors into a cohesive whole. The result is a coffee that is intense, sweet, and unmistakable—exactly what a limited-edition birthday release should be.
