In the cup, notes of orange marmalade, crunchy almond cookies, and smooth milk chocolate blend together to create a harmonious and rich flavor profile. The result is a cup with a pleasant sweetness, full body, and an elegant aftertaste reminiscent of a sweet dessert—ideal for anyone who wants to enjoy specialty coffee even without caffeine.

This coffee comes from the Jaltenango region in Chiapas, where a group of 65 local women producers united under the La Tribu project cultivate coffee trees with the utmost respect for the land and the community. An altitude of 1,650–1,800 meters above sea level provides the ideal climate for the slow ripening of the cherries, ensuring a full aromatic profile and sweetness in the cup. The Peñazco and Bourbon varieties used here are prized for their delicate fruity acidity, harmonious sweetness, and rich flavor, which remains prominent even after decaffeination.

The Mountain Water Decaf method preserves the beans’ natural complexity without the use of chemicals. The beans are carefully soaked and filtered, removing the caffeine while retaining the fruity, sweet, and chocolatey notes. The result is a cup that doesn’t feel watered down but offers a full-bodied taste experience. It's still okay for a fully automatic machine
You can smell the almond cookies, but they're a little burnt
I tried various methods of preparation, but none of them worked
It seems a bit too strong for a filter or French press
It always clogged the filter, even though I set the grind to be much coarser than usual

I only used it for espresso; I haven't tried it with a filter—it makes a good, rich coffee with fairly pronounced acidity

Grinder (setting): You really need to grind it very finely—probably because it’s an all-purpose coffee. I used setting 2.4 on the 1Zpresso K-Plus, which is really fine; otherwise, the coffee will pour through the portafilter like a waterfall.
