There are coffees for a quick morning wake-up, and then there are those that make you want to sit down with a cup for a while. Los Campos from the Belgian roastery Boo! definitely belongs to the second group. This naturally processed Costa Rican coffee offers a fuller, fruity-sweet cup that blends ripe red plums, juicy cherries, and gooseberries, while the finish slowly transitions into dark chocolate. The coffee has a complex profile, with subtle wine-like notes, yet it retains a pleasant liveliness thanks to its fresher, fruity acidity. It’s a cup with greater depth that’s best savored without rushing.
Behind this coffee stands the Ramirez Navarro family, who have been farming in the Los Santos region for several generations. The family tradition is closely tied to farmer Alexis Ramirez, whose approach to coffee lives on even years after his passing. In 2015, the family built their own micromill, Los Campos, which gave them control over the processing and traceability of individual lots. The farms are located at elevations ranging from 1 ,750 to 2,000 meters, and in addition to the traditional Caturra and Catuai varieties, Typica, Gesha, and the Milenio, Centroamericano, and Esperanza hybrids are also grown here. It is precisely this combination that creates this unusual yet natural blend, which represents a cross-section of different parts of the farm and harvest periods.
Each part of the blend undergoes natural processing directly at the family’s micromill. Whole coffee cherries are dried on raised beds and turned regularly during drying to ensure an even process. This time, the family is not undertaking complex fermentation processes; instead, they are allowing the individual lots to express their own character. The different varieties, growing conditions, and harvest times thus each contribute their own unique element to the final blend, collectively creating a more layered flavor profile.
