The beans come from the renowned Huila region in the Colombian highlands, where small-scale farmers grow them at altitudes of 1,400–1,900 meters above sea level. Coffee cherries of the proven Castillo and Caturra varieties are harvested by hand and processed using the washed method. A key advantage is that the decaffeination process itself takes place directly in Colombia, eliminating the need for lengthy transport of green beans overseas. As a result, the coffee retains maximum freshness, purity, and transparent traceability.
Caffeine is removed using the gentle Sugarcane EA method, which utilizes natural ethyl acetate derived from local sugarcane. The beans are first steamed, then soaked in a caffeine-binding solution, and finally gently dried to the optimal moisture content.
