In the cup, you’ll find notes of gingerbread, orange zest, and a hint of tropical fruit—all supported by only moderate acidity, so no sharp, piercing notes disrupt the flavor. Lovers of rich, spicy coffees will adore this lot in both espresso and filter brews and will appreciate how well it holds up even when brewed in an automatic coffee machine.

The Kindeng Mill processing station is located in Jiwaka Province, in the heart of the Wahgi Valley in the Western Highlands region, at an elevation between 1,520 and 1,770 meters. The local microclimate, combined with exceptionally fertile volcanic soil, creates ideal conditions for Arusha, Bourbon, and Typica coffee varieties. The station purchases fresh cherries from hundreds of smallholder farmers in the surrounding hills, who cultivate small plots of land measuring roughly one hectare and tend to the plants exclusively by hand, without mechanization. It is precisely the slow ripening of the cherries at the high altitude of the Wahgi Valley that accounts for the high concentration of sugars, which you’ll then recognize in the cup as notes of gingerbread, carob, and mango.

This coffee has undergone traditional dry processing. After being hand-picked, the cherries are first carefully sorted so that only perfectly ripe fruits with a high sugar content are sent for drying. The whole berries are then dried on raised beds or special tarps, and they must be turned regularly and carefully so that the beans dry evenly and have time to absorb all the sweetness from the pulp. As a result, the filter brew highlights aromatic notes of cinnamon, orange, and wild berries with a creamy, nutty aftertaste, while the espresso fully reveals a syrupy texture reminiscent of homemade mango jam with a long, chocolatey finish.
