The story of this coffee is described as the first successful co-fermentation process at the Los Patios farm in the Huila region. This coffee lot was developed by a research team whose goal was to enrich the beautiful and delicate profile of Geisha with sweet peach tones. The farm purchased coffee cherries from various farmers in the region, whose altitude ranges between 1,600 and 1,900 meters above sea level and whose average size is 3 hectares. After 12 hours of aerobic fermentation, a team of researchers added their own patented peach concentrate, in which the beans were fermented again. This fermentation phase lasted two days, after which the beans were spread out on African beds, where they were evenly dried for 12-16 days.
