The pronounced apple-like acidity is reminiscent of ripe pears and is complemented by a light, lively body. The finish leaves a sweetness of stone fruit and a clean, fresh impression. It is precisely the simplicity and precision of the flavors that allow this Chiroso to shine without an unnecessarily heavy or overly complex profile.
Behind this coffee is Liliana Ramírez, who tends to approximately 1,000 Chiroso coffee bushes at the Finca El Yolombo farm in the Anzá region of Antioquia, Colombia. Thanks to such a small scale, she can truly keep the entire process under control and pay attention to every detail. The exporter Desarolladores, who discovered her farm and supports her in her coffee work, helps her implement the right practices. Chiroso is a variety that has been rapidly gaining prominence in Antioquia in recent years. Genetically, it has been identified as an Ethiopian landrace—that is, a variety originating from genetically diverse populations of Ethiopian coffee trees—and is prized primarily for its significant quality potential.
Processing is done using the washed + Cochadas method, a traditional process used on small farms. Liliana harvests approximately every two weeks over the course of three days. She first runs each harvest through a water bath to separate lower-quality cherries and then hulls them. She gradually combines the cherries from each day’s harvest and finally washes everything together. Most of the coffee ferments in water during this process, which promotes a clean flavor profile without pronounced undesirable fermentation notes. The result is a light and juicy coffee that beautifully highlights the character of Chiroso.
