The coffee is sourced from the Gaitania region of Tolima, where small-scale farmers farm at an altitude of 1,700-2,000 metres above sea level. United under the wings of exporter Azahar Coffee, they supply beans from the Caturra, Castillo and Colombia varieties. Las Garzas Farm is an example of how strong a community of growers can be, maintaining a passion for coffee despite difficult times. In the 1990s, due to low farmgate prices, many growers turned to poppy cultivation. Today, however, the region is re-establishing itself as a coffee superpower, thanks not only to the dedication of the farmers but also to the ideal conditions of volcanic soil, rich microclimate and views of Colombia's third highest mountain, Nevado del Huila.
The coffee is processed naturally, but the cherries undergo a 38-hour fermentation process that gives them a more pronounced fruit profile. This is followed by drying for eight days on African beds in the shade, ensuring even drying and preserving complexity. It is this careful processing method that makes the resulting coffee so vibrant, sweet and exceptionally full-bodied. As a result, Colombia Las Garzas is not only a taste experience, but also a story of people who trust their hands and their soil enough to change the world one cup at a time.
