Typika Roastery ’sColombia Hugo Gualaco is a filter-roasted coffee that is smooth, sweet, and very easy to drink. The cup is dominated by strawberry, complemented in the middle by the freshness of red apple, while cane sugar brings a light, soothing sweetness to the finish. According to the roaster, the filter version of this coffee emphasizes a softer and rounder fruit profile, so it’s not an aggressively fruity cup, but rather a balanced, playful, and pleasantly approachable coffee for every day. It’s a filter coffee that will win you over with its effortless character, sweet fruit notes, and clean finish.

The beans come from Colombia,from the San Adolfo region in Huila, specifically from the Finca La Vega farm. The producer is Hugo Gualaco, and the coffee trees here grow at an elevation of 1,600 meters above sea level, where conditions are ideal for developing sweetness and a fruity character. The variety is Caturra, which in this lot comes across as delicate and rounded, complementing a flavor profile built on strawberries, apple, and cane sugar. Overall , this is a coffee that showcases Colombia in an approachable, sweet, and elegant way—without excessive intensity, yet with plenty of character.

Processing is done using the natural method, in which the coffee cherries are dried whole, including the skin and pulp. The bean thus remains in contact with the fruit portion of the cherry for a longer period during drying, which gradually imparts sweetness and a more pronounced fruity character to it. This process usually requires careful monitoring of the drying and regular turning of the cherries to prevent unwanted fermentation notes. In this coffee, the natural processing enhances a softer strawberry sweetness, a rounder body, and an overall smoother, more playful profile in the cup.
