The farm is located at an elevation of 1,350 meters and, in addition to coffee production, focuses on protecting the surrounding landscape. A significant portion of the land is left to its original vegetation, and Ellen has long been involved in restoring local ecosystems by planting native tree species. This approach creates an environment that supports not only the quality of the coffee produced but also the long-term sustainability of the entire farm.
This lot is a blend of Yellow Catuaí, Mundo Novo, Obatã, and Yellow Bourbon varieties, all processed using the natural method. After harvest, the coffee cherries are dried whole, including the pulp, allowing the beans to absorb more of the fruit’s natural sweetness.
