House of Plum from DAK Roasters is a Peruvian coffee with a deep, sweetly fruity profile that lives up to its name. In the cup, notes of dark plums, hazelnuts, and raisins come together, complemented by a silky texture and a sweetness reminiscent of fruit jelly candies. It feels full-bodied, smooth, and pleasantly rounded, with a darker fruitiness that blends beautifully with the nutty base. It’s a coffee for those moments when you want an espresso with pronounced sweetness, but without unnecessary heaviness.
The beans come from Peru, specifically the Cusco region, where the Cedrobamba Collective oversees production. Coffee cherries are harvested here from August to October at altitudes between 1,800 and 2,100 meters above sea level. It is precisely the combination of high altitude, volcanic soil, and cool afternoon breezes that slows the ripening of the cherries and helps develop a deeper sweetness. As a result, the coffee in the cup has not only a distinct fruity character but also a smoothness and complexity that feels very pleasant and balanced.
These coffee cherries are processed using the natural method, in which the cherries are dried whole, including the skin and pulp. The bean thus remains in contact with the fruit throughout the drying process, gradually absorbing its sweetness, body, and more pronounced fruity character. This process requires careful monitoring, regular turning, and sufficient time to ensure the cherries dry evenly and avoid unwanted fermentation notes. The coffee is also labeled as a field blend, meaning it is not a single specific variety but a blend of varieties from that particular harvest.
