Brazil Choco Sponge by DAK Coffee Roasters is a sweet and creamy specialty coffee that builds on the classic Brazilian profile, but with a very smooth and clean flavor profile. The flavor features notes of milk chocolate, caramel, and plums, which together create a smooth, sweet, and almost “dessert-like” cup. The coffee feels creamy and round, without pronounced acidity; instead, it carries a gentle sweetness and pleasant body. It is very balanced as an espresso, ideal for an everyday cup.
The coffee comes from the Cambuquira area in the Mantiqueira de Minas region of Brazil, where producer Natália Brito operates alongside the family-run Jaguara Coffee project. Natália is a second-generation grower, a cupper, and an exporter who connects multiple local farmers in the region. In addition to working on her own farms, she also buys and exports coffee from other producers, thereby helping to improve quality throughout the area. She constantly experiments with processing and drying, resulting in a variety of flavor profiles, ranging from classic to more modern interpretations of Brazilian coffee.
This lot is the Yellow Catuaí variety and was processed using the dry natural method. After harvesting, the cherries are dried whole, which enhances sweetness, body, and delicate fruity notes in the flavor. The drying process is carefully controlled so that the coffee acquires the typical Brazilian chocolatey character while retaining its clarity and creamy texture. The result is a simple yet very pleasant espresso coffee that builds on sweetness and harmony.
