It’s already evening, but you’re craving coffee—and you don’t want to spend the night counting sheep until morning? Nordbeans Roastery has the solution for you! It’s their decaf Colombia Atunkaa Sleepy Sheep—after which you won’t have to count sheep at all. You can look forward to a unique flavor explosion packed with fruity and floral notes and a sweet body. The coffee has a light body and medium acidity. Your taste buds will dance to the sweetness of peaches, apricot jam, and strawberries, along with the freshness of elderberries—all topped with a creamy finish. Plus, you can brew this coffee as both an espresso and a pour-over. As an espresso, its rich sweetness really shines, while as a pour-over, its freshness takes center stage.
The beans come from Colombia, specifically the village of Argelia in the Cauca region. Here, coffee trees grow at an elevation of 1, 850 meters and are tended by small-scale farmers on plots averaging one hectare in size. The Siruma Coffee organization ensures that their work is carried out as effectively as possible to produce high-quality beans by providing training to the farmers. Growing coffee in this region is not easy due to high crime rates and general social unrest, but Siruma Coffee helps them overcome these challenges as well. Today, decaffeinated coffee is no longer something we need to worry about tasting unpleasant; on the contrary, processors and roasters are now experimenting with it, and a cup of this decaf will pleasantly delight you.
Atunkaa was first processed using the natural method, in which the whole berries—including the pulp—were dried, infusing the beans with a fruity flavor. Decaffeination was then carried out using the natural “sugar cane decaf” method, which employs sugarcane extract. During the process, the beans are gently steamed and washed with an extract containing natural ethyl acetate. At the same time, the beans are quickly dried, allowing them to retain their natural, rich coffee flavor. Then the beans are ready to travel the world and brighten the day of every coffee lover.
