This nanolot from the Odako farm in Ethiopia, roasted by Nordbeans, is a rare reflection of a specific location and a specific harvest that will likely never be repeated. A light roast for drip brewing allows a very rich flavor profile to shine in the cup, blending the sweetness of candied orange and ripe apricots. This distinctly fruity experience is complemented by an elegant floral aroma of jasmine. The result is a modern and juicy coffee that is sure to delight any fan of lighter roasts.
This lot comes from the Bensa area in Ethiopia’s Sidama region. The Odako farm and processing station is located right in the heart of the village of Shantawene, where coffee trees grow sheltered in the shade of 200-year-old trees and surrounded by wild rivers with waterfalls. Behind the entire project are brothers Assefa and Mulugeta Dukamo, who founded Daye Bensa Coffee in 2006. Their goal was to support small-scale growers in the area so they wouldn’t have to make the arduous journey of traveling dozens of kilometers with their harvest. Improving logistics thus led to a huge leap in the quality of the entire production. Next to the farm, the brothers also built a training center for employees.
To bring out the natural and rich potential of this rare variety and the high-altitude forest environment, the farmers opted for traditional natural processing. The harvested coffee cherries—which come partly directly from the Odako farm’s land and partly from local neighbors—are neither hulled nor washed. Immediately after harvesting and sorting, they are spread whole on drying beds. Here, the coffee dries very slowly under the Ethiopian sun without any intervention. It is precisely this slow and dry process that allows the beans to absorb the maximum amount of sugars from the pulp, thus creating a full-bodied flavor.
