Cognac with your morning coffee? This time, it’s right in the flavor itself. The Colombian Cocondo Natural from Nordbeans combines notes of sour cherries and plums with a hint of cognac. Its rich body, medium acidity, and more pronounced fermented character will delight anyone who enjoys a slightly bolder profile in natural coffees. If this is the combination you love in natural coffees, Cocondo has something to offer you. Plus, it’s a coffee that’s particularly close to the hearts of the roasters in Liberec.
The story of Nordbeans began at the Cocondo Orgánico farm—this is where their very first coffee came from, and their collaboration with farmer Luis Emilio Velez has been ongoing since 2015. The farm is located near Titiribí in Antioquia, Colombia, at an elevation of 1,600 meters above sea level, overlooking the Cauca River valley. Luis originally worked in healthcare, and he brought his interest in people’s health and the surrounding environment to his coffee farming as well. He has been practicing organic farming since the late 1990s and obtained organic certification in 2005. He preserves the native vegetation on the slopes and uses natural fertilizers and solar energy.
This lot consists of the Caturra and Colombia varieties, processed using the natural method. In this process, the coffee beans are dried inside whole cherries, along with the skin and pulp. At Cocondo, the harvested cherries are first washed and then spread out on elevated African drying beds. Luis modified them to increase drying capacity. The beds are protected by plastic sheeting, which helps control conditions during this process. The farm prepares this natural variant specifically for Nordbeans.
