Siete Soles from the producer Cuatro Vientos in the Acevedo area of Colombia’s Huila region, where coffee trees grow at an elevation of around 1,800 meters. It is precisely this high altitude, the local climate, and the careful handling of the coffee that provide the beans with a solid foundation for a distinctive flavor profile. The coffee first undergoes natural processing and then proceeds to decaffeination. The goal is to preserve as much of the bean’s original character as possible, so that even after the caffeine is removed, you don’t lose any of its sweetness, fruitiness, or body.
Caffeine is removed using the Sugarcane Decaf method, also known as EA, which employs natural ethyl acetate obtained through the fermentation of sugarcane. The beans are first steamed and moistened to prepare them for decaffeination. They are then washed several times with a natural ethyl acetate solution, which binds the caffeine while preserving as many flavor compounds as possible. After the solvent residues are removed with steam, the coffee is dried and cooled. The result is a full-bodied decaffeinated coffee with pronounced sweetness, fruitiness, and a creamy body that you can enjoy at any time of day.
