Honduras Jam Roll from DAK Coffee Roasters is a sweet, juicy, and distinctly layered specialty coffee that builds on a rich fruity profile and a pleasant chocolate depth. The flavor profile unfolds with notes of blackberry jam, cocoa nibs, and nougat, which together create a dense, sweet, and almost dessert-like cup. The coffee feels full-bodied and rounded, yet retains its liveliness—it’s not a heavy sweetness, but rather a juicy combination of fruit and chocolate. As it cools, a delicate aroma emerges, reminiscent of a light liqueur-like sweetness, which further rounds out and deepens the entire profile.

The coffee comes from a hilly region of Honduras where producers known as the Caballeros have been collaborating for many years. These are partners with whom DAK has been working for years and who are a reliable source of very sweet and consistent coffees. Thanks to this long-term collaboration, we can build on trust and experience from multiple harvests, which is reflected in the clarity and consistency of the resulting cup. Each harvest from them brings a similar foundation— sweetness, depth, and a well-defined fruity character —which can then be further developed during processing.

This lot is from theCatuaí variety, which is processed using the dry natural method. The cherries are dried whole, which naturally enhances the coffee’s sweetness, body, and fruity notes. In this case, the drying process shifted the profile toward a pronounced jam-like character, dominated by blackberry and darker forest fruits, while cocoa and nougat notes add depth and a subtle chocolate base. The longer contact between the pulp and the bean during drying also brings a light layer of fermentation, which creates a delicate liqueur-like finish in the cup .
